Do you ever feel the need to ‘escape’ for the weekend?

I do.  Especially when summer arrives.  

The hot summer temperatures do not really bother me much because it seldom gets humid where I live – however, I’m a wimp when it comes to humidity.

But, there is just something about hopping into the car and a couple of hours later, arriving at a completely different terrain and climate.

Thankfully, there are many places to visit that are within a 2 hour drive of the Phoenix metro area, where I live.

When my husband and I were much younger and didn’t have a lot of money (not that we have tons of money now ;-)….

we would take day trips up to exciting destinations in Northern Arizona.

Places like Sedona, Jerome, Prescott and Flagstaff were our favorites.  And, the temperatures were usually quite a bit cooler.

We would pack up our two daughters (our youngest three, weren’t here yet), and leave early on a Saturday morning for a day of fun, returning late at night.

A couple of weekends ago, we spent the weekend up in Prescott for Father’s Day.  You see, this Father’s Day was bittersweet, because it is the first one without my father-in-law, who passed away from ALS last September.

My dad passed away 5 years ago, so we decided to go out of town and do something really fun with the family.

We had a great time and I thought you might want to view our photo album 🙂

We visited Montezuma’s Castle on our way up to Prescott.

It is not so much a castle, but a Indian cliff dwelling that was built 900 years ago.

We had fun walking the 1/3 mile trail around the area.

Of course, it is always nice to get a piggy-back ride from dad 😉

(My son Kai has a disability called arthrogryposis, which can make it difficult to walk long distances.)

We had fun and were soon on our way to Prescott.

Our favorite destination in Prescott is the Sharlot Hall Museum, which includes the first Arizona’s Governor’s Mansion (Prescott was the first state capitol).

The interior is complete with period furnishings and interactive displays for the kids.

The rest of the grounds have beautiful gardens, a ranch house, school house and a building that houses period transportation…

But, he did try to teach us something new 😉

The ranch house had a ‘kitchen garden’ complete with heirloom variety vegetables that they used back in the 1800’s.

Weekend Escape

Another great attraction of Prescott’s is that they have great shopping – particularly if you like antiques.  So, of course we had some fun looking and buying some pieces.  I will be using some in the garden.

After shopping, we spent time hanging out at the quaint courthouse and its park.  The front walkway was lined with Arizona state flags in celebration of the centennial.

Soon our entire family (grandmas, aunts, uncles and cousins) will escape for our annual trip to Williams, AZ.

I bet you have all been waiting with ‘baited breath’ for me to reveal our “TOP SECRET” Family Recipe, ever since I referred to it in my last post about making peach vinegar.

First, before I reveal our family recipe (and risk the wrath of my family for revealing this secret recipe 😉, I thought that I should give you a little background first….

At this point, you are probably asking what the picture of this lady has to do with the recipe.

Well, this was her homemade salad dressing recipe. To be honest, I don’t know where she got the recipe or if she created it herself.

So, who is this woman?

Her name was Ruth A. Smith and she was my grandmother. My dad was her only child.  At one point, their family lived in Phoenix in the 1940’s during the war and she worked in a factory that made airplane parts.  I call this photo ‘Rosie the Riveter’.

She was a wonderful grandmother and loved spending time with us…

Yes, that is me on the far right with my ‘boy’ haircut.  My sister, Jennifer is sitting next to me and my grandmother is holding my brother, Scott (my youngest sister, Grace, hadn’t been born yet).

When we were young, we spent a couple of summers in Germany with them, where my grandfather worked. Later, they moved back to the States and settled in California where we lived. Now, my grandmother wasn’t a great cook – however, she wasn’t bad either. When we would visit them – we would have the same menu each time, which included:

– Roast Beef (it was always a bit dry) with potatoes and salad

– Ground Beef Patties with a vegetable that we hated (squash) and salad.

After dinner, we always had a VanDeKamps’ Angel Food cake with whipped chocolate frosting and vanilla ice milk.

The fact that my grandmother wasn’t a great cook makes it all the more interesting that she made fabulous homemade salad dressing. Years later, my siblings and I would reminisce about her yummy salad dressing. The only problem was that we never asked her how to make it.

A few years ago, I asked my mother if she could remember what my grand mother put in her salad dressing. Thankfully, my mother was able to remember all the ingredients – just not the proportions.  So, I set to work to figure out the recipe and I was thrilled to finally get it! Since then, it is all we use on our salads with a few different ingredients from time to time to change it up.

So, I am breaking all the family rules by sharing this with you (just kidding) – but seriously it is too good a recipe to keep to ourselves.

So here it is:

Ruth Smith’s Vinaigrette

Ingredients:

2 Tablespoons Canola Oil (or other non-flavored vegetable oil – don’t use olive oil)

2 1/2 Tablespoons Sugar

1 pinch Salt3 – 4 Tablespoons Apple Cider Vinegar or other fruit-flavored vinegar

(My Homemade Peach Vinegar is pictured above)

I’ve also used Pomegranate White Balsamic vinegar too.

Directions:

In a small jar add the salt, sugar and apple cider vinegar.  Then add the oil and place the lid on the jar and shake until all ingredients are combined.

Pour over your salad and enjoy!

I would rather shop for plants then clothes.  Seriously….

So, I was so excited when it was finally time to buy the plants for our front landscape renovation.

My husband came with me (he usually does, because I am known to buy more plants then what is on my list).  My nephew, Kenny, also came with us because he loves to garden.

Because we were only renovating part of the front landscape, we didn’t have to buy a lot of plants.

I did purchase both purple and white trailing lantana, white gaura and gopher plant for the front garden and Arizona yellow bells and pink trumpet vine for the back garden.

Okay, I also bought a plant that wasn’t on my list – my husband left my side for 5 minutes, so it really wasn’t my fault 😉  But, I just couldn’t resist the fragrance of the pink jasmine vine and I have the perfect place for it (right next to my new vegetable garden, where it can grow along the fence).

Whenever you have to buy many different plants; you usually will have to go to more then one nursery.

 The nursery we visited didn’t have the desert marigold I wanted, which can be hard to find.  I also didn’t like the look of the 24″ box Desert Museum Palo Verde trees, so we bought a 15-gallon.

I realize that our new tree looks like a green stick with some leaves glued on it.  But, this type of palo verde grows very fast.

I also have a single desert marigold growing in my front garden and  they grow easily from seed.  So, I will just collect some seeds and plant them instead of searching other nurseries for the plants.

The front garden is progressing well.  We have added the boulders, have almost finished planting and have installed the drip-irrigation.

I am planting an octopus agave that I grew from a ‘pup’ and have also planted some of my artichoke agave pups.

Next, is to add the flagstone step stones and finally the gravel.

It will be so nice to be finished.

We did take a break this past week for a family gathering at Double S Farms….

Old and New Blend Together in My Backyard Landscape

This week is off to a busy start.  My husband and kids went on a camping trip, leaving me alone for 24 hours.

I had great plans for what I would do while they were gone. 

I would work on writing blogs….

Work in the garden….

Plant seedlings indoors for a instructional video coming up….

Work on our taxes….

AND get a Redbox movie to end the day.

Well, I did achieve writing a blog and I did get our taxes done, but that was about it.  My oldest daughter asked me to watch my granddaughter for a few hours, which I was happy to do.  However, she had just returned from the doctor after getting her shots, so she was not too happy.  So I just held and cuddled her.

Then my daughter brought lunch over and we visited for awhile.  So I got started on my taxes a bit late.  I do like using tax software, but I don’t like having to get all my receipts together.

I ended the evening eating dinner at 8:00 and watching TV.

As I sat in my very quite house, I remembered where I was one year ago to the day.

We were on a cruise of the Caribbean with in-laws.  They had treated us all to the cruise, which was to be a great time to build memories while we still had my father-in-law with us.  

My in-laws always had their grandkids sitting their table.  My father-in-law couldn't smile or speak anymore, but he was able to communicate through his iPad.

We had a fabulous time.

Our first visit was to St. Maarten.  I had my camera with me and along with taking photos of the family, I also took pictures of the tropical plants.

At first, I was shocked at how blue the water was.  (I am from Southern California, where the ocean is gray blue).

A Wonderful Memory…..

Two of my favorite things are birthdays and dessert…

Earlier this month, we celebrated the birthday of my daughter, Ruthie, and my sister-in-law, Marisue.

Ruthie turned 14 and I won’t tell you how old Marisue is, but she is much younger then me 😉  She is also the mother of the twins, Danny and Dean.

When we celebrate birthdays, I usually volunteer to make the dessert.  I just love baking (but not anything I have to fuss over).

For this double birthday celebration, I made two different desserts AND I broke one of my baking rules…

I didn’t try out the recipes out ahead of time.   I decided to make ‘Heath Angel Food Dessert’ and  ‘Hot Fudge Marshmallow Monkey Bread’

The Heath Angel Food Dessert turned out okay too.  It was an Amish recipe that I picked up during a visit last year.

Here is the recipe:

HEATH ANGEL FOOD DESSERT

1 Angel Food Cake, cut into 1-inch cubes

16 oz. whipped topping

1 (12 oz) jar caramel topping

6 – 8 Heath Bars, crushed or toffee bits

Mix the whipped topping and caramel together.  Put angel food cake in a 13 x 9 pan and pour the whipped topping caramel mixture on top.  Sprinkle the Heath bars on the top.  Freeze until ready to serve or serve without freezing.

The Hot Fudge Marshmallow Monkey Bread also tasted very good.

I love school holidays….

I don’t have to get up early to get kids ready…

And the kids are happy!

Last Monday, while my wonderful husband was busy nailing wooden planks for our new vegetable garden fence, I spent the morning outside with my youngest daughter, Gracie in the garden.

First, we took down our regular bird feeder and hung dried sunflowers for the birds.

We grew sunflowers last summer and saved the flower heads for a winter treat for our birds.

Then we turned our attention to our older vegetable garden.

Gracie planted some new sunflower seeds while I planted cucumber and basil seeds.

I have been working on a new project.  I am growing vegetables and flowers together in pots.

All my pots are in the ‘in between’ stage.  This one has red and green leaf lettuce and dianthus.

I also just planted a small cucumber variety in front of the small trellises and there are also some newly germinated cosmos as well.

The nasturtiums are beginning to bloom.  They make great companion plants in the vegetable garden and help to repel damaging insects.

My sugar snap peas are also beginning to bloom.

We had a great time in the garden, enjoying our warmer then usual February weather.

Well, I wish I could say that the new addition is my completed vegetable garden….but although we have made some progress, it is till not finished.

But, we did add something new to our back garden.

To be honest, I’m not sure why it took us so long to plant a citrus tree.  In our first home in Phoenix, we had three beautiful citrus trees that we enjoyed.

What really caused to finally plant one in our back garden is the fact that our three youngest kids love to pick the oranges from the tree at their grandparent’s house.

However, since my father-in-law’s death, my mother-in-law will eventually be moving and there will be no oranges for them to pick.

When we told the kids that we were planting one of our own, they were so excited!

They were so anxious to help.

We dug our hole nice and wide so that the roots could grow outward easily.  The depth of the hole was the same depth as the rootball.

We chose a young tree because they transplant much easier, not to mention having to get it out of the container.  Plants experience ‘transplant shock’ when planted in a new area.

The variety that we selected is ‘Arizona Sweet’.  It does very well in our area and are suitable for juicing and peeling.

We didn’t apply any fertilizer because it would stimulate top growth before there is a large enough root system to support it.  Wait a year before fertilizing.  Then you will fertilize three times a year in February, May and September.  An easier way to remember it is to fertilize around Valentine’s Day, Memorial Day and Labor Day.

I told the kids that we would probably have to wait 2 – 3 years before we see any fruit.

**I can just picture my own grandkids picking oranges someday from our tree.

We have been a bit busy this week working on our new vegetable garden.

Monday and Tuesday, my two strong nephews came over to help.  I must admit that it is more fun to dig with someone else to talk to.

So far, we have dug up 6 inches of the existing soil, cut the wood for the sides of the raised bed and the fence planks.  My husband nailed the planks to the wooden sides today, at 3 1/2 inches apart.

Next, we will add the bags of compost and aged steer manure and mix it with the existing soil.  Then we will put of the sides.

I haven’t included any photos of progress today, but I promise that I will when we have finished – hopefully this weekend.

I have had some questions about how we will use rebar for supports for shade cloth in the summer.  I promise to show you how we will do that as well.

I can tell that spring is on its way because my phone is getting busy with people calling with questions and requests for consults.

I visited with the HOA board of a condo complex today to help them with their hummingbird garden.  Tomorrow, I’m off to do a photo design to update a church memorial garden.

I have a major confession to make….

I am a total ‘plant nerd’.

When I mentioned that to my husband, he said “I already knew that” with a smile on his face.

I came upon this revelation when we visited Disneyland last week. 

I had my camera ready to take pictures of the kids enjoying themselves.  But, I found myself stopping to take photos of the beautiful plants, particularly the container planting.

In the end, I had three times more photos of plants then of my kids….

But in my defense, it is easier to take photos of stationary plants then kids on moving rides (the pictures came out all blurry).

Guess Where I’ve Been?

You may have noticed that I haven’t posted for a few days (or maybe not 😉  I feel somewhat incomplete when I have gone more then three days without writing a blog post, but sometimes life gets a bit crazy or sometimes I go out of town.

I went away for a few days to a ‘mystery’ location.  I had a great time and was able to take some pictures of some beautiful potted plants, annuals, perennials and shrubs.

My husband and I decided to surprise our kids with a 3-day trip to Disneyland.

When my father-in-law died last fall, my mother-in-law received an unexpected life insurance payment from his few years on the Air Force.

She gave some the insurance money to each of us.  So, we decided to use the money to treat ourselves and the kids to a fun vacation.

We didn’t tell the kids anything about leaving on a trip.  I had my daughter, Rachele, take the kids to church and I packed up both our cars while they were gone.

When they got home, we told them to get in the cars and we took off.  They had no idea what was going on.  Gracie (above) was in the car with my husband and I.  She guessed where we were going within 3 minutes.

However, Kai and Ruthie, who were in our daughter’s car, couldn’t figure it out.  They kept calling us on the phone, trying to guess.  About two hours later, we stopped for gas and told them where we were going.

We had a fabulous time and stayed until the park closed each day.

We even spent a whole day at ‘California Adventure’ as well.

I remember going to Disneyland quite often as a child and teenager.  We had taken our two oldest girls quite often when they were young.  In fact, it was our oldest daughter’s idea to go to Disneyland with the younger kids because years ago, we had surprised her and Rachele with a trip there as well.

I must admit that I was pleasantly surprised at how beautiful the gardens were.  I didn’t remember them looking so nice, so I took quite a lot of photos.

There were some great examples of plants that look great in winter for our climate and a unique way to use vegetables.

I’ll share more plant and family photos once my husband emails them to me from his iPhone 🙂
